Tomato Soup & Grilled Cheese
I gotta admit, tomato soup isn’t usually my go to, but add a grilled cheese? I’m so in!
This recipe takes no more than 20 minutes, start to finish & uses cottage cheese to make help it creamy and a bit more filling :)
This recipe, prepared as is, has approximately 25g protein.
Grilled Cheese & Tomato Soup
Servings: 4
Ingredients
8 slices whole grain bread
8 slices colby jack or cheddar cheese
1T butter, softened
(1) 28oz can whole, peeled tomatoes
1c cottage cheese
1T extra virgin olive oil
1 ½ cups vegetable broth
1tsp onion powder
1T minced garlic (3 cloves)
1T dried basil
1/4tsp red pepper flakes (optional)
1/2tsp sea salt
pinch black pepper
Directions
Add the can of tomatoes, cottage cheese, olive oil, vegetable broth, garlic, basil, red pepper flakes, salt, and pepper to a blender.
Blend on low to medium (being careful not to spill) until smooth and creamy, about 30-60 seconds.
Pour into a large sauce pan and heat over medium to medium-high heat. Bring to a light boil, stir and lower to medium.
Allow to simmer for 10-15 minutes, or until hot.
While the soup heats, prep the grilled cheese.
Spread the butter evenly across all slices of bread, on one side only.
Top 4 slices of bread with 2 slices of cheese and place the other slice of bread on top with the buttered side facing up.
Heat a skillet over low-medium to medium heat.
Once hot, add the grilled cheese and cooke until each side is lightly golden and cheese is melted, about 3-5 minutes.
Pour soup into a bowl, slice grilled cheese, and enjoy!
